New Year's Eve Chocolate Hats: Ice Cream Cones


These hats are so adorable! I am planning on having my kids make them for New Year's. Consider making them for birthday parties as well, just change the decorations.

From Disney's Family Fun Magazine comes a really adorable chocolate covered ice cream cone idea that you can do with kids. Use these to hold your favorite ice-cream on New Year's Eve, but first they'll decorate the table!

New Year's Eve Chocolate Covered Ice Cream Cone Hats

Ingredients
Sugar cones
Ice cream
12-ounce DOVE Chocolate (6 - 2 ounce Chef Series bars) or any high quality dark chocolate, broken up
Icing: Make this easy. Buy the Wilton's icing writers. They come in multiple colors and are easy to use
Shoestring licorice
Mini-nonpareils

Instructions
1. Spread melted chocolate chips over each sugar cone with a small spatula. Let the chocolate harden for about 1 hour (or 20 minutes in the refrigerator).
2. For chinstraps, use icing to attach the ends of a fruit strip or a length of shoestring licorice to the inside of each cone.
3. Use icing to decorate the hats and attach nonpareils.

Frosted Espresso-Glazed Brownies


I made these brownies for my cousin's birthday party and they were scrumptious!!! I have so many people asking me for the recipe, so here it is:

Ingredients:


Brownie Layer
1 pan DCD Truffle Fudge Brownie Mix, prepared

Chai-Cinnamon Frosting Layer
8 oz. cream cheese, at room temperature
¾ stick of butter, at room temperature
1½ cups powdered sugar
1½ teaspoons vanilla
1 teaspoon cinnamon
1 teaspoon DCD Spiced Chai Tea

Glaze layer
2 tablespoons butter
3 bars DCD Chef-Series Dark Chocolate (6 oz.)
1/2 cup heavy cream
1 1/2 tablespoons instant espresso powder,
dissolved in 1 tablespoon hot water.

Tools
DCD Offset Spatula, DCD Parchment Sheets

Preparation
1. Prepare DCD Truffle Fudge Brownies as directed. Line pan with parchment paper for easy release and cleaning. Let cool and lift parchment sheet to remove brownies from pan.
2. With an electric mixer, cream together the cream cheese and butter, until light and fluffy. Add the powdered sugar, vanilla, cinnamon, and Spiced Chai Tea, beating the frosting until it is thoroughly combined. Spread frosting evenly over the cooled brownies. Chill for 1 hour. While brownies are chilling, prepare glaze.
3. In a small sauce pan, melt the butter and Dark Chocolate over low heat, stirring continuously. Pour in heavy cream and espresso, whisking together until smooth. Remove glaze from heat and let cool.
4. Pour glaze over frosted brownies and chill, covered, for at least 2-3 hours, or overnight.
5. Cut brownies into 1 1/4" squares and serve.

Note: I did not put in the espresso powder not knowing who enjoys coffee and who does not. They were scrumptious and you will be the hit of the party when you bring them!!

Halloween/Fall Candy Making

As I prepare for a candy making workshop tomorrow, I think about the wonderful tastes of Fall. All of the spices, pumpkin, gingerbread. Ahh, and the comfort foods. But I digress....back to the candy making. I will be teaching how to make strawberries that look like ghosts, truffles rolled in pumpkin pie spice, bark with dried apples, cranberries (or raisins) and walnuts to name a few! Then there are the chocolate covered pretzels, who doesn't love the sweet-salty combo? Decorate with Fall/Autumn sprinkles - festive. The ladies will have such FUN! I love seeing their faces light up with delight.

Adult S'mores


As we welcome autumn, nothing says bonfire like s'mores! If you do not have space for a bonfire or in case of inclement weather, never fear...I recently made an adult only s'mores in the microwave:

Ingredients:
Graham Crackers
Marshmallows
DCD Merlot Fudge Sauce, Raspberry Cabernet Fudge Sauce or Creme de Menthe Fudge Sauce

Place a graham cracker on a plate, cut up a marshmallow into 4-6 pieces and lay on the graham cracker, drizzle with the Fudge Sauce and microwave for 7-8 seconds and you have a decadent Smore's for one.

Enjoy when you get home from work as a snack or after the kids are in bed! So easy and so YUMMY, you will be wanting more than one!

Chardonnay Caramel Sauce


DOVE Chocolate Discoveries' Chardonnay Caramel Sauce:


Our delicious sauce is slow-cooked to caramelized perfection, laced with cream, vanilla and California Chardonnay for a dessert sauce that’s a perfect compliment to chocolate, fruit, ice cream or even a spoon.


Made with simple, high quality ingredients such as Real California Chardonnay, Pure Vanilla, Cream, and Molasses. Hand made in small batches and slow cooked to give a deep caramel flavor. Chardonnay is the perfect light to medium body wine that complements the caramel. Sauce is made old-world style, started by caramelizing sugar in a copper pot. Next butter, cream and vanilla are added along with the Chardonnay Wine. This contains 4% alcohol by weight. To serve warm, remove lid and heat in microwave for 20 seconds, stir. Refrigerate after opening.

Great to eat right out of the jar or as topping for desserts or ice cream. Use for a nice plating design to add great flavor to special desserts. Great drizzle for brownies, mousse. Drizzle in your glass or on top of sipping chocolate.

Use as base in your hot beverages to make your own gourmet specialty coffee. Swirl into mousse or whipped cream for dulce de leche flavor. Combine with other ready to eat toppings like peanut butter baking bits or Chardonnay Wine Brittle for out of this world Ice Cream Sundae. Combine with the Merlot Fudge Sauce for the perfect gift giving set. Create your own chocolate caramels with Magnetic molds and Tempering Tools.

Double Chocolate Zucchini Bread


Double Chocolate Zucchini Bread

2 cup grated zucchini
4 c flour
1/2 c cocoa powder
1 1/2 c sugar
1 tsp baking soda
1/2 tsp baking powder
3/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 1/2 c oil
3 eggs
1 1/2 c milk
2 tsp vanilla
1 c choc chips
2 oz shaved dark chocolate (DOVE)
1/2 c choc chips

Mix dry ingredients together. In a separate bowl mix wet ingredients together. Make a well in the dry ingredients and add wet ingredients. Mix until just moist, then add 1 c choc chips and 2 oz shaved dark chocolate. Pour into greased loaf pans (2). Sprinkle 1/2 c choc chips on top. Bake at 325 for 65 minutes. Toothpick should come out clean. Enjoy!!!!

Kids will never know there are vegetables in it and I won't tell them....Yummmm

Memorial Day!

Hello and welcome to my blog!

As we prepare to celebrate Memorial Day and honor our fallen men and women, here are some ideas I will be incorporating into our celebration on Monday....


Chocolate covered cherries - white chocolate (or milk/dark)

Chocolate covered strawberries - dip in white chocolate (or milk/dark) then into blue sprinkles for a Red, White and Blue effect! So cute!!!!

Strawberries filled with chocolate mousse - cut the stems off so there is a cavity inside the strawberry and cut a little off the tip of the strawberry so it stands up - Double YUM Factor!!!!

Brownie Kabobs - FUN for the kiddos!!! Take a skewer and alternate strawberries, truffle fudge brownie bites, pineapple, etc...drizzle chocolate or raspberry/strawberry sauce on - YUM!!!

Chocolate truffles - dip in white/dark chocolate and sprinkle red, white and blue jimmies or stars on top!

Truffle fudge brownies topped with red, white and blue transfer sheet for beautifully decorated brownies, everyone will wonder how you did it!

Nothing says Memorial Day like cherries, strawberries and chocolate! Just a sample of ideas! You will be the HIT of the party!!!!
