Double CHOCOLATE Pumpkin Cupcakes

This cupcake recipe is perfect for any Fall, Thanksgiving or Halloween gathering or party!

** Great for a kids' Halloween party too.

My daughters love these cupcakes and with pumpkin in them, I love them even more...nothing like getting fruits and veggies in little ones, when they are least suspecting - hehe!


Double Chocolate Pumpkin Cupcakes

Cupcakes

Ingredients:
* 1 1/2 C. cake flour
* 2/3 C. DOVE Chocolate Discoveries cocoa powder
* 2 t. baking powder
* 1 t. baking soda
* 1/2 t. salt
* 1 C. plain lowfat yogurt
* 1 3/4 C. canned pumpkin (15 oz. can)
* 1 t. white vinegar
* 2 t. vanilla extract
* 1/2 C. unsalted butter, softened
* 1 1/2 C. lightly-packed light brown sugar
* 3 large eggs
* 8 oz chopped DOVE Chocolate Chef Series Dark Chocolate

1. Preheat oven to 350 degrees. Line 24 cupcake cups with paper liners.

2. Sift the flour, cocoa, baking powder, baking soda and salt together; set aside. In a separate bowl, stir together the yogurt, pumpkin, vinegar, and vanilla extract, set aside.

3. In a large mixing bowl, and using an electric mixer on medium speed, beat butter and brown sugar until light and fluffy. Beat in the eggs, one at a time. Alternately beat in the flour and pumpkin mixtures in thirds (for example, beat in 1/3 flour mixture followed by 1/3 pumpkin mixture and repeat until everything is combined). Fold in the chocolate.

4. Working quickly, spoon batter into cupcake cups, filling each about 3/4 full. Place cupcake pans in the center of the preheated 350 degree oven and bake approximately 25 minutes. Cupcakes are done when they spring back when lightly touched or a toothpick inserted in the center comes out clean. Cool pans on wire racks for 10 minutes then remove cupcakes from pans and let cool completely on the wire racks.

5. While cupcakes are cooling, prepare cream cheese frosting (recipe follows). When cupcakes are completely cool, spread with frosting.


Spiced Cream Cheese Frosting

Ingredients:
* 8 oz. cream cheese, softened
* 1/4 C. unsalted butter, softened
* 2 C. powdered sugar
* 1/4. t. vanilla extract
* 1/2 t. DOVE Chocolate Discoveries Spice Chai Tea

In a medium bowl, beat together cream cheese, butter, powdered sugar, vanilla, and Spice Chai Tea. If frosting is too soft, chill in fridge for 15-20 minutes.

Frost cupcakes and decorate with molded chocolates, sprinkles, shaved chocolate, etc...ENJOY!

Chocolate Museum



Last weekend we went to Put-in-Bay, OH to celebrate our sixth wedding anniversary. We had a great time on the island and enjoyed the ferry boat ride.

For lunch we dined on the island and loved a rigatoni soup that was served at Mossback's! I need to find a recipe for the soup or return for another bowl. We checked out various sites, the Perry Monument which was under construction, toured Heinemann Winery and Crystal Cave. Also, on the island was the Chocolate Cafe with a Chocolate Museum attached.

Heinemann Winery is also the home of Crystal Cave (largest geode). It was so much fun to tour Crystal Cave and walk into the cavern was was all crystals. Also had a tour of Heinemann Winery. They grow 50% of the grapes used in their wines and grape juice. If I lived closer I would have offered wine and chocolate pairings! The cost of the tours also included a sample of wine or grape juice. If you purchase 4-6 bottles they will deliver to the Miller Ferry, which was awesome; do not need to carry bottles around with you for the day.


The museum offered information such as the history and making of chocolate and chocolate collectibles. I was surprised not to see DOVE Chocolate or MARS on the timeline. I thought the DOVE Bar would have been on the timeline? There were also to have your photo taken as Willie Wonka with the Oompa Loompas or as Lucy from the Lucille Ball Show in the chocolate episode.

The Chocolate Cafe offered chocolates from the South Bend Chocolate Company, an ice cream shop and a coffee bar with some desserts. Chocolates looked great! We had just finished lunch and were not hungry, but very thirsty since we had walked there from downtown and the temps were in the mid 80's. I enjoyed an iced Cappuccino and my husband had a raspberry iced tea. The iced Cappuccino hit the spot, a little energy boost and something cool to sip.

If you are planning a visit to South Bass Island where the Chocolate Cafe and Chocolate Museum are located, it is worth stopping in for a visit, something to drink or a chocolate to satisfy your craving.

Pretty in Pink Choco-Berry Smoothie

Chocolate and berries have never been such a delight together! These smoothies are so refreshing and delicious. You will want to drink both servings yourself! But invite a friend and share, you will be glad you did! Don't let summer go by without trying these....They are very easy to make! The Frosty White Smoothie Mix is so versatile and this recipe is an example of one of the delicious recipes that can be made with it. I love the Chocolate-Berry smoothies!


Pretty in Pink Choco-Berry Smoothie

Makes 2 Smoothies.

Ingredients Smoothie:
1 packet DCD Frosty White Chocolate Smoothie Mix
¾ cup milk
2 cups ice
1½ teaspoons DCD Raspberry Dessert Sauce
2 oz. DCD Chef-Series Dark Chocolate (1 bar), chopped
DCD Raspberry Dusting Powder

Directions:
1. Add smoothie mix, milk and ice in a blender and pulse until ice is crushed and mixture begins to look like a smoothie.
2. Add raspberry sauce and chopped dark chocolate and pulse until desired consistency. If desired, add more raspberry sauce and chocolate to taste. Pour into glasses and garnish with raspberry dessert sauce, whipped cream and a raspberry.

Chef's Tip
To turn this family-friendly smoothie into an adults-only drink, add 2 oz. raspberry vodka, and serve in a martini glass rimmed with raspberry dusting powder.

Red, Blue & White Chocolate Mousse!

White Chocolate Mousse

ingredients
1 cup heavy cream
1 teaspoon sugar
2 DOVE CHOCOLATE DISCOVERIES™ Chef-Series
White Chocolate bars (4 oz.)
DCD Pastry Bag
DCD Chef-Series Dark Chocolate,
DCD Dessert Decorator, for garnish
DCD Dark Chocolate Leaves, for garnish

PREPARATION
1. Pour cream and sugar into the bowl of an electric mixer, and whip until soft peaks form. Set aside.
2. Melt chocolate in microwave on HIGH at 20-second intervals, stirring in between each until smooth.
3. Gently mix melted chocolate into whipped cream.
4. Use Pastry Bag to pipe mousse into glasses, alternating with blueberries and strawberries.
5. Garnish with a strawberry or blueberries and/or shaved White or Dark Chocolate using your Dessert Decorator. A strawberry dipped in white chocolate and then blue sprinkles would be lovely as well!!!

Creamsicle Martinis


ingredients

2 ounces mandarin orange-flavored vodka,

2 ounces DOVE CHOCOLATE DISCOVERIES™ (DCD) Chocolate Martini Mix,

1 ounce Irish Cream,

1 ounce light cream or half and half,

1 cup ice, Optional garnishes:,

Chocolate-covered strawberry,

DCD Chef Series Dark Chocolate,

Chocolate-covered pretzel rod

PREPARATION

1. Shake the vodka, martini mix, Irish Cream and light cream in a martini shaker with ice to chill.

2. Pour into a 12-ounce martini glass, and garnish as desired.

I love summer and what could be better than grilling all summer long? Here are wonderful and easy ideas to make your summer bbqs and gatherings simple and delicious! Great gift ideas for Father's Day!!!


SWEET 'N SMOKY CHOCOLATE BBQ SAUCE (my personal favorite!):

FABULOUS RECIPE: Spiced Chocolate Roasted Vegetables

Choose a mix of your favorite seasonal vegetables or try 1 each of red and yellow pepper, zucchini, yellow squash, red onion, 3 portabella mushrooms and 1 cup grape tomatoes.

Heat oven to 450 degrees F. Cut vegetables into 1-inch pieces (except tomatoes). Mix 3/4 cup DCD Chocolate Fig Balsamic Vinaigrette with 3 Tablespoons DCD Spiced Cocoa Rub. Toss all together in large bowl. Spread vegetables evenly on foil-lined sheet pan. Bake for 25-35 minutes until fork tender.

St. Patty's Day ~ Chocolate Stout Cupcakes


What are you making for St. Patrick’s Day? Make 14 Chocolate Stout Cakes. This recipe will bring you luck!

CHOCOLATE STOUT CUPCAKES
Ingredients:

1 box DCD Chocolate Baking Mix
2 eggs
6 oz stout beer (recommended: Guinness)
1/4 cup sour cream
1/2 stick butter
2/3 cup DCD Dark Chocolate Baking Bits (included in Baking Mix)

Sweetened whipped cream, for garnish
DCD Chardonnay Caramel Sauce, for garnish
DCD Dark Chocolate, shaved, for garnish

Directions:

1. Preheat oven to 350 degrees F. Line a cupcake pan with paper liners, and spray lightly with a non-stick baking spray.

2. Pour chocolate baking mix into a medium bowl. Using an electric mixer, begin mixing, pouring in the eggs, stout beer, and sour cream. Mix for approximately 30 seconds.

3. Place butter and chocolate together in a microwave-safe bowl, and melt at 20-second intervals, until completely melted and smooth. Pour into mixer, and mix for an additional 30 seconds.

4. Fill the cupcake liners up about 2/3 of the way (you will have leftover batter, use this to bake another pan). Bake for 16-17 minutes, or until a toothpick inserted into the center of the cupcake comes out almost clean, with a little batter stuck to it.

5. Let cupcakes cool completely. Swirl some Chardonnay Caramel sauce into a batch of sweetened whipped cream, and dollop onto each cupcake. Garnish with some shaved Dark Chocolate, and enjoy!

My WAKR Radio Appearance


I had the pleasure of being on WAKR's program with Andy January and Kathryn DeLong this past Saturday! I had a wonderful time sharing my passion for chocolate with the listeners. Andy and Kathryn are wonderful and are seamless as a team!

My Beautiful Home is a wonderful show, and airs every Saturday on WAKR 1590 AM from 10 - 11AM. Andy and Kathryn talk about beautifying your home and events in the area. Tune in and you will be listening every week!!

It was my first time on the radio and I had a blast. Andy and Kathryn have asked me to return to their program. I cannot wait, could this be the start of a new career? How fun would it be to talk about chocolate on the radio on a regular basis?

Fundraising Opportunity!

January is National Soup Month!


Warm up from the inside out on cold January days with this wonderful, winning combination! The kids will LOVE you for it!!!

INGREDIENTS
¾ cup heavy cream
¾ cup whole milk
7½ Tablespoon DOVE CHOCOLATE DISCOVERIES™
Dark Sipping Chocolate
1 Tablespoon maple syrup
2 Tablespoons honey
2½ Tablespoons cream cheese at room temperature
3 Tablespoons mascarpone cheese
Six 1/3 to ½ inch slices challah or brioche bread
4 Tablespoons unsalted butter - room temperature

PREPARATION
1. Pour the heavy cream and milk into a heavy-bottomed medium saucepan and bring to a simmer over medium heat. Sprinkle in the Dark Sipping Chocolate, and whisk vigorously until the chocolate is completely melted and the mixture is smooth in texture. Remove from heat, and cover to keep warm.
2. Whisk the cream cheese, mascarpone cheese, maple syrup, and honey in a small bowl until well blended. Spread the mixture onto three slices of the bread, and top with the remaining slices. Spread butter onto each side of the sandwich.
3. Heat a medium-sized sautè pan over medium heat. Add the sandwiches individually and cook until each side is golden brown (roughly 1-2 minutes per side). Remove from pan and repeat with remaining sandwiches. Cut each sandwich in half and serve immediately with a small cup of warm chocolate soup for dipping.
