Raspberry Mousse!

Raspberry Mousse that is delicious and easy to make. Pipe raspberry mousse onto silver spoons and it makes an elegant presentation fit for a bridal shower or tea party! Talk about "Wow" factor!!!


Raspberry Mousse Dessert Spoons

Ingredients
¼ cup heavy whipping cream
1 tablespoon sugar
¼ cup prepared DOVE CHOCOLATE DISCOVERIES™
Raspberry Dessert Sauce12 large raspberries, rinsed, dried thoroughly
DCD Pastry Bag
DCD Parchment Paper
DCD Chef-Series Dark or Milk Chocolate, for garnish

PREPARATION1. For mousse, using an electric mixer, whip together heavy cream, sugar and Raspberry Dessert Sauce until soft peaks form. Scoop mousse into Pastry Bag.
2. Place spoons on Parchment Paper and, using a small tip on bag, pipe a small amount of raspberry mousse onto each, topping with a raspberry.
3. Heat chocolate in microwave on HIGH at 20-second intervals, stirring in between each until smooth; drizzle or dab over each spoon. Refrigerate until ready to serve.


Raspberry Cordial Cupcakes

ingredients
DOVE CHOCOLATE DISCOVERIES Chocolate Baking Mix, prepared

as cupcakes

1 recipe raspberry mousse as above
Heavy Whipping Cream
1 Tablespoon Sugar
12 large raspberries, rinsed, dried thoroughly
1 Tablespoon sugar
12 Large Raspberries, rinsed, dried thoroughly
Dark or Milk Chocolate, for garnish

PREPARATION
1. For cupcakes, prepare Chocolate Baking Mix as directed for

cupcakes and Raspberry Dessert Sauce until soft peaks form.

Scoop mousse into Pastry Bag.

2. When cupcakes have cooled, scoop mousse into Pastry Bag,

using a small tip on bag, pipe a small amount of raspberry mousse

onto each cupcake.
3. Using an electric mixer, whip together heavy whipping cream and

sugar until soft peaks form. Scoop whipped cream into Pastry Bag and

pipe on top of cupcakes. Garnish cupcakes with raspberries and/or chocolate. Refrigerate until ready to serve.

Frosted Espresso-Glazed Brownies


I made these brownies for my cousin's birthday party and they were scrumptious!!! I have so many people asking me for the recipe, so here it is:

Ingredients:


Brownie Layer
1 pan DCD Truffle Fudge Brownie Mix, prepared

Chai-Cinnamon Frosting Layer
8 oz. cream cheese, at room temperature
¾ stick of butter, at room temperature
1½ cups powdered sugar
1½ teaspoons vanilla
1 teaspoon cinnamon
1 teaspoon DCD Spiced Chai Tea

Glaze layer
2 tablespoons butter
3 bars DCD Chef-Series Dark Chocolate (6 oz.)
1/2 cup heavy cream
1 1/2 tablespoons instant espresso powder,
dissolved in 1 tablespoon hot water.

Preparation
1. Prepare DCD Truffle Fudge Brownies as directed. Line pan with parchment paper for easy release and cleaning. Let cool and lift parchment sheet to remove brownies from pan.
2. With an electric mixer, cream together the cream cheese and butter, until light and fluffy. Add the powdered sugar, vanilla, cinnamon, and Spiced Chai Tea, beating the frosting until it is thoroughly combined. Spread frosting evenly over the cooled brownies. Chill for 1 hour. While brownies are chilling, prepare glaze.
3. In a small sauce pan, melt the butter and Dark Chocolate over low heat, stirring continuously. Pour in heavy cream and espresso, whisking together until smooth. Remove glaze from heat and let cool.
4. Pour glaze over frosted brownies and chill, covered, for at least 2-3 hours, or overnight.
5. Cut brownies into 1 1/4" squares and serve.

Note: I did not put in the espresso powder not knowing who enjoys coffee and who does not. They were scrumptious and you will be the hit of the party when you bring them!!

Double Chocolate Zucchini Bread


Double Chocolate Zucchini Bread

2 cup grated zucchini
4 c flour
1/2 c cocoa powder
1 1/2 c sugar
1 tsp baking soda
1/2 tsp baking powder
3/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 1/2 c oil
3 eggs
1 1/2 c milk
2 tsp vanilla
1 c choc chips
2 oz shaved dark chocolate (DOVE)
1/2 c choc chips

Mix dry ingredients together. In a separate bowl mix wet ingredients together. Make a well in the dry ingredients and add wet ingredients. Mix until just moist, then add 1 c choc chips and 2 oz shaved dark chocolate. Pour into greased loaf pans (2). Sprinkle 1/2 c choc chips on top. Bake at 325 for 65 minutes. Toothpick should come out clean. Enjoy!!!!

Kids will never know there are vegetables in it and I won't tell them....Yummmm
